Black Bean "Oh, Oh, OH!" Breakfast Burritos

Happy accident #1. I was searching the fridge yesterday to see what I could scrounge up for lunch and ended up throwing this amazingly delicious concoction together. It was so good I made it again today post workout and I literally moaned out loud- it's that good.

Have fun with this one!

One can 14.0 oz. low sodium black beans
1/4 of a red onion
garlic
fresh spinach
Montreal Steak seasoning
2 eggs
pepper jack cheese
small-medium sized tortillas
Must Have fresh cilantro!

In a non-stick frying pan or skillet throw in a half a can of low-sodium black beans and 1/4 of a  red onion, diced, over med-low heat. Throw in about two tablespoons of minced bottled garlic (bottled garlic isn't as potent as fresh-and let's be honest, when is there too much garlic?) and heat until onion begins to soften.

Cover mixture with spinach leaves. (Don't be afraid to load it on there. It really wilts down to nothing.)

When spinach begins to wilt, stir and cook for an another minute or two till leaves are well blended with bean mixture. Crack two eggs into pan and stir well. Increase heat.

Sprinkle McCormick brand "Grill Mates Montreal Steak" seasoning over mixture and stir. Add enough seasoning so that you can no longer smell that disgusting eggy smell.

Mixture will be "wet" so cook to your desired texture. Turn off heat and add a few pinches of shredded pepper jack cheese. Don't over-load this with cheese. You'll want to, but resist the urge! Don't mask the flavor with cheese!

Place a fajita-sized or soft-taco sized tortilla in a plastic bag and heat in the microwave for 15 seconds. Remove from microwave and place tortilla on a plate.

Spread a layer of cilantro on the tortilla. A LAYER! and spoon egg scramble into tortilla. Fold.

Enjoy piping hot!
